According to the experts on climate change the UK will continue to experience milder and wetter winters. It does not look like it this January with one of the coldest winters on record.
Cold temperatures, which is not a problem this year, break the rhubarb's dormancy. Once the snow is gone it is a good time to start forcing rhubarb with a container that will exclude light, but of sufficient height to allow the stalks to grow. The container can also be filled with straw to act as insulating material. Forced rhubarb is delicious - the stems are more tender, sweeter and do not need to be peeled. |
